1 cup chicken stock (or vegetable broth or water for vegetarians)
2 large eggs
2 large egg whites
3 tablespoons margarine, melted (other oil or apple sauce)
1/4 t salt
1 t cinnamon (or more for taste)
1/2 t cumin (or more for a more pronounced taste)
2 large tart apples, peeled, cored and sliced (I used granny smith)
1 cup walnuts
1 cup raisins/craisins or combo
Preheat the oven to 350 degrees. Grease a 9” square glass baking pa. In a medium bowl, break matzos into small pieces ad soak them in the broth until softened, about 5 minutes.
In a large bowl, combine the eggs, egg whites, 2 tablespoons of the melted margin, and the salt, cumin, and cinnamon. Beat with a wire whisk and pour over the matzos.
Stir in the apples, walnuts, and raisins. Spoon the mixture into the prepared pan and drizzle the remaining 1 tablespoon of margarine over the top. Bake for 30-40 minutes or until slightly browned. Stir warm.
